

Just prior to Passover production we make a dinner for one of the local not for profit organizations. Fingering through my recipes, I come across this salad dressing. I'd forgotten about it; how much I love the reduced orange juice sweetened with maple syrup. Now I see the photos from the dinner and think it is perfect to put up on the website. It is spring, I need to lose the winter pounds....time for salads. Lots of salads!

Ingredients:
- 2 cups orange juice
- 1/8 cup rice vinegar
- 2-3 tablespoons maple syrup
- pinch of salt
- pinch of pepper
- 1 1/3 teaspoons fresh thyme, stripped and chopped.
- 1/2 cup canola oil

Reduce orange juice to one cup. This photo is for a large quantity of dressing so the scale is not in line with the ingredients in this recipe. |

Add orange juice reduction, rice vinegar, maple syrup, salt, pepper and thyme to a bowl or measuring cup. |

Add oil and whisk. For a thicker dressing, place the ingredients into a blender. Drizzle the oil slowly while blender is at a low speed. |
Shelf live is 4 days. Yields 1 1/2 cups dressing. |
