

At the end of my day of testing recipes using my new Waring Pro deep fryer and lots of oil, I find myself with half of a giant red garnet yam. Peeled, long and begging to be cooked, I cut long 1/2" pieces. The oil, still hot at 375', is ready for whatever is coming next.
I lay the sliced potato into the fryer basket and lower them into the oil. Wowzers, they start cooking within a mass of bubbles. As the bubbles subside, I raise the basket. The fries are beautiful. Easy, simple.....who needs a latke?
