

Guacamole and chips, I love guacamole and chips. It is so incredibly simple to make and even more simple to buy ready made when you're in a pinch. Either way, can't do Cinco, Seis, or Siete de Mayo without it. While making this Mexican inspired meal tonight, I thought of the 2nd Avenue Deli VHS I bought years ago. Traditional Jewish deli foods are demonstrated, with about 5 major ingredients rotated around a chicken, onion or a potato. That is what I notice about these Mexican dishes; cilantro, jalapeno, avocado, tomato and lime....can't make much without these basics on hand.

Ingredients:
- 1 1/2 cups Avocado (about 2 large)
- 2 tablespoons lime juice (1 - 2 limes)
- 1/2 teaspoon cumin
- 1/4 cup small diced tomatoes, seeded
- 1/4 cup minced sweet onion
- 1 teaspoon minced garlic
- 2 teaspoons minced cilantro
- 1/2 teaspoon salt or to taste

Peel and mash the avocados in a bowl. |

Add the remaining ingredients and mix. Adjust seasoning to taste. And, that is how you make Kosher Guacamole! |
