Marble Cheesecake with Fresh Strawberry Topping

I enjoy any opportunity to eat chocolate. Add fresh strawberries and whipped cream...yeah, all my free Weight Watchers points' out the window for the coming year. I make this cheesecake the same way as the Classic Plain Cheesecake (see recipe) except I siphon some of the batter and add it to melted chocolate chips. A basic marble cheesecake is fabulous. All the bells and whistles just give it that "oh-I'm-so-glad-that-Moses-came-down-with-those-ten-commandments" just in time to eat cheesecake sense of awe. I shall not eat this entire cheesecake....I shall not eat.....

Ingredients:


Recipe for Classic Plain Cheesecake, including the crust and sour cream topping.

  • 1/3 cup chocolate chips
  • 2 tablespoons whipping cream
  • 1 1/2 cups cheesecake batter

Strawberry Topping:

  • 4 cups strawberries, washed, hulled and sliced into 3/8" slices
  • 1/2 cup cold water
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract



Steps:

Make the Classic Plain Cheesecake as per the directions.

In a glass bowl, melt the chocolate chips with the whipping cream. Stir until smooth and well blended. Add the plain cheesecake batter. Stir until smooth.

The balance of the cheesecake filling should be in the prepared pan with a crust. Dot the top of the cheesecake with the chocolate mixture. Drag a small paring knife through the batter.

Drag the knife across and then the opposite direction. This will form the marbled pattern.

Place the cheesecake into a pan and fill 1/2 way with water. Bake as the plain cheesecake.

When baked, top with sour cream as classic plain cheesecake. Cool as directed.

Make Decorator's Whipped Cream as recipe.

Wash, hull and slice strawberries into 3/8" thickness.

Combine water, sugar and cornstarch in a small sauce pan.

Cook over medium heat, stirring constantly until thick and clear. Pour over the prepared strawberries. Set aside to cool.

When the cheesecake and strawberry sauce are cold, pile the berries onto the center of the cheesecake leaving 1" around the cake edge.

Pipe Decorator's Whipping Cream around the edge of the cake with a large dip. Chill cake until ready to serve.

And that is how you make a Kosher Marble Cheesecake with Fresh Strawberry Topping!
